How to soak dried bamboo shoots with rice water

Wash the dried shoots to remove dirt. Then soak the dried shoots for about 6-8 hours to soften. According to folklore, people often soak dried shoots with rice water. You can change the soaking water 2-3 times to filter out any remaining bitterness.

Take out the soaked shoots and wash them clean, then put them into a pot of boiling water. After that, drain the water and add new water to continue cooking for 1 hour.

About color

About shape

Avoid buying dried shoots with mold spots, gray-black spots, moist or tough when touched, and have an unpleasant foul smell when brought close.

Currently, dried bamboo shoots are widely sold in the market, so to ensure safety, you should buy dried shoots with clear labels and origins, pay attention to the production date and expiry date.

Instructions on how to make delicious bamboo shoot soup with pork bones

Ingredients:

– Dried bamboo shoots

– 1 pig trotter

– Green onions, dried onions

– Fish sauce, salt, pepper to taste

Instructions:

– Step 1: Complete the steps of soaking and tearing the shoots as instructed above.

– Step 2: Wash the pig trotter clean, chop it into bite-sized pieces. Then blanch the trotter in boiling water with a little salt, then rinse it under clean water.

– Step 6: After skimming off the foam, put the stir-fried bamboo shoots into the bone soup and proceed to cover the pressure cooker to cook. After about 20-30 minutes of cooking, the bamboo shoot soup will be tender and aromatic.
